Lefse is a traditional Norwegian flatbread made with potatoes. It has been a part of our family holidays for as long as I can remember. My Grandma Johnson used to make it from scratch every year. As we got older and moved farther away, she would send us care packages. My sister, Liz, went to visit our Aunt and Uncle to learn how to make it. We are trying carry on the tradition by making it from scratch every year. This year, our parents helped with Day 1 prep work. Liz and I did Day 2 and proudly made 60 lefse while the cousins played together all day long. It was a marvelous day!
